Chubby Group is acquiring 47 Gen Korean BBQ locations in a $100 million deal that accelerates its national expansion. The Los Angeles-based group, known for meat-centric Asian concepts, will convert the first 12 restaurants on November 1, 2026, with the remainder transitioning in waves over the following twelve months.

Chubby Cattle Group's strategy hinges on vertical integration. It controls its meat supply chain, sourcing whole cattle carcasses from Australia and Japan and storing them in its own warehouse. The company uses whole-animal processing across its more than 25 brands. Co-founder David Zhou states this model allows them to control quality and pricing, unlike many steakhouses that rely on broadline distributors. The group also provides business-to-business infrastructure like financing, construction, and supply chain support to its brands, aiming to bring other restaurant groups into its ecosystem. To date, the company has invested over $90 million in its restaurants and supply chain, funded by operating cash flow and capital from founders, partners, and family offices. Its Chubby Club membership ecosystem extends benefits across partner brands and home delivery.

Financial Scale and Growth Trajectory

The $100 million acquisition builds on a period of explosive growth for Chubby Group. The company has scaled from 20 to 70 locations since its 2016 founding and plans to reach roughly 100 units by the end of this year. Its goal is to surpass 200 locations within two years. This growth is reflected in its soaring revenue.

Before signing the letter of intent, Chubby Group closed a $50 million Series A funding round led by Prysm Capital at a $500 million valuation. The group has approximately 450,000 Chubby Club members and plans to open 30 new Mr. Chubby and Chubby Bowls locations in 2027. The deal is subject to definitive agreements, lease transfers, and regulatory approvals.

Conversion and Brand Integration Plan

The phased conversion will integrate the Gen sites into Chubby's supply chain and hospitality playbook. Top-performing Gen Korean BBQ locations will be rebranded as Gen X BBQ, while others will convert to existing Chubby Cattle brands. The process includes menu upgrades, higher-quality proteins, interior renovations, and added buffet stations. Chubby Group has grown unit revenue up to six times at former Gen sites after conversion. The acquisition includes a letter of intent to purchase 47 restaurants and four development sites from the publicly traded Gen Restaurant Group for up to $100 million, which includes a note convertible into Chubby Group equity at a $1.5 billion valuation.

Industry Context and Market Impact

This consolidation occurs as demand for Asian dining concepts surges. Sales at Asian full- and limited-service restaurants outside the Asia-Pacific region grew at an 11% compound annual rate from 2020 to 2025. That outpaces the overall restaurant industry's 7% growth rate. Specifically, the number of Korean restaurants in the U.S. increased by 10% in 2023.

Gen Restaurant Group, also based in Los Angeles, will retain the GEN brand, its consumer-packaged-goods business, and remain publicly traded. It will keep roughly three restaurants for staff training and research and development. The sale is expected to reduce Gen's approximately $160 million in lease obligations. Texas accounts for 12 of the 47 restaurants being sold, with locations in Houston, Dallas-Fort Worth, Austin, El Paso, and Waco. Chubby Group, founded by Haibin Yang, David Zhao, and Joyce Li, plans to rebrand the Texas locations as GEN X or under its Chubby Club concepts. The first phase of the takeover involves 12 locations targeted for November 1, 2026.
