Bar Chucho, a new Mexican bar on the Lower East Side, is a place where fun and good food come together. Located just a five-minute walk from its sibling Mexican fine-dining spot Corima, Bar Chucho is the brainchild of chef Fidel Caballero, Jesse Kranzler, and Sofia Ostos. The bar's name is inspired by a drink that's an acquired taste, and it doesn't take itself too seriously.

The bar's atmosphere is pure fun, from the upbeat music and retro posters in the bathrooms to the smoking man mural painted on the side of the bar. The bar's design is a key part of its appeal, making it a great spot to grab a drink and enjoy some good food.

## What to Order

Bar Chucho's menu offers a range of delicious options, including a perfect bar burger. The single-patty hamburguesa is made with dry-aged beef and a beef garum, rounded out with melty queso chihuahua, blistered peppers, and a bone marrow-burnt onion mayonnaise. It's a great option for meat-lovers, and it's priced at $18 for a single patty and $24 for a double.

For a good veggie option, get the mushroom gringa, a huge crispy quesadilla made with Vato's flour tortillas, stuffed with cumin-laced mushroom carnitas. This is a great option for those looking for a vegetarian or vegan meal, and it's priced at $19.

## Best Seat in the House

If you're looking for a great spot to sit and enjoy your meal, snag the front corner space by the windows. This spot is perfect for larger groups and offers great natural light before sunset. If you're looking for a more private spot, head upstairs.

## Make a Night of It

The team at Bar Chucho has intentionally chosen not to serve wine, encouraging customers to head across the street to Cellar 36 for their wine needs. This makes it easy to make a night of it, grabbing a drink at Bar Chucho and then heading to Cellar 36 for a wine tasting.

## Insider Tip

If you're feeling adventurous, ask for a shot of the bar's iteration of the namesake liquor. This strong spirit is best downed quickly, and it's made with toasted green cardamom and herbs. The version I had used hoja Santo, and it was a unique and enjoyable experience.
