Mixers

Most independent kitchens need only occasional mixing, unlike bakeries that run mixers all day. A heavy-duty mixer that can handle a few hours of use each day is usually enough. A 10- or 20-quart model offers a small footprint while still meeting most needs. Pizza restaurants, however, may require a larger mixer for high-volume dough.

To maximize versatility, look for a heavy-duty mixer with an attachment hub. That hub lets you add a vegetable slicer or meat chopper, turning the mixer into a grater, shredder, dicer or meat grinder. The lower purchase price and faster operation reduce labor costs compared to manual mixing, cutting or grinding.

Food Processors

Some kitchens need a more efficient way to handle fruits and vegetables without a mixer attachment. A continuous-feed food processor speeds up cutting, slicing, dicing, julienning, crimping and shredding, and can grate nuts and hard cheeses. Using one machine for multiple tasks saves space and lets staff focus on higher-value jobs.

Whole produce processed in a continuous-feed machine is cheaper than buying pre-cut items, and it lasts longer, lowering waste costs. A combination food processor offers bowl-style and continuous-feed capabilities in one unit. The bowl can chop, mix, mince and emulsify for hummus, salsa, dressing or pesto, while the continuous-feed chute provides the same functions as a stand-alone processor without extra space or cost.

Specialty Food Prep Equipment

Food cutters, or Buffalo choppers, are another multi-purpose tool that can cut costs and labor. They shred chicken for enchiladas, chicken salad or pulled pork, and can also make dips or spreads. Some choppers can be fitted with a vegetable slicer or meat grinder for added versatility.

Automatic potato peelers also help kitchens reduce labor. They use abrasive material and water to peel potatoes in bulk, speeding up prep for fries, mash or au gratin and cutting waste.
